Lulu Fedi is the head bartender in the American Bar, the glamorous, grown-up cocktail bar hidden in the heart of the hotel.
Bringing a wealth of experience in the art of mixology to the team, Lulu was thrilled to discover one of Gleneagles’ best-kept secrets: Andrew Fairlie’s Secret Garden. A Victorian walled garden in the beautiful Perthshire countryside, Andrew works closely with Head Grower Jo Campbell to grow a range of fruit, veg and herbs, which are picked and on the plate within hours in his two Michelin starred restaurant.
Lulu was intrigued by the possibilities and now regularly uses the garden’s beautiful produce, taking her pick of the herbs, edible flowers and fruit available.
‘Jo lets me know what’s abundant and good in the garden’, says Lulu. ‘I then play around with the different flavour combinations. That’s how I developed the sugarsnap pea and bronze fennel cordial we’re using in the Pietra Preziosa Champagne Cocktail. The cordial brings a fresh, herbal element to the mix, it’s light, fresh yet savoury at the same. It’s the perfect after dinner cocktail.’
